As summer arrives, we are celebrating with Sage. This herb has a long history as a source of wisdom
and once you know it, an unmistakable fragrance. There are many possibilities with Sage, some of them may well be entirely new to you. It’s a world of possibilities for the Mediterranean spice.
We are including in this month’s subscription a household favourite here at Nerdy Girls Farm: fresh pasta with sage butter sauce. This recipe makes use of our own eggs and sage. While we’d love to have a cow to make our own butter, that’s just not in the cards right now. We use Longspell Farm’s flour, keeping things as local as we can.
Too many people feel that making fresh pasta is a difficult process; it isn’t. You can do it 100% by hand or (like us) cheat a bit and use a mixer. Just make sure it’s heavy duty enough to handle the heavy dough. Rolling it out can be done with a pasta roller or just a rolling pin. The kind of pasta you want can be cut with a pizza cutter. You do not need fancy bits to make it. Not at all. Red sauce is wonderful, but the sage combined with butter as a sauce is an experience everyone needs to have. Sprinkle on a little Parmesan and fresh cracked pepper and you’ll feel like you’re eating out!
